Tuna patê, Olive patê, Cheack pea salad, Black eyed pea salad,
Mediterranean goat cheese salad, Octopus salad, Grilled chouriço, Baked
cheese with herbs, Codfish salad; Carrots in vinegar and cilantro and
Escabeche of fresh sardines

  • FISH

Seabass with olive oil and vegetables; Roasted codfish; Dogfish Soup;
Dogfish with white wine and cilantro; Tunafish summer salad; Bouillabaise

Lamb stew, Lamb chops; Roasted lamb with carots; Porc tender loin with
plums and Port wine; Fried Porc cubes with bread pureé; Chiken stew;

- Several traditional deserts from the medieval convents, rich in eggs,
  suggar, cinnamon, and spices, such as:

Cheese cake with honey, Sericaia, Encharcada, Farófias and Arroz Doce

Our program, starts in Lisbon with a welcome dinner. All week we try to offer a real experience of Portugal, taking the group to non touristy places, where everything is autentic and real, but also, going to the very best monuments, palaces and touns of the Alentejo Region.

Olive oil, garlic, cilantro, parseley, onions, bayleave, paprika, pepper, rosemary, leek, spinach, lamb, porc, codfish, seabass and dogfish are some of our main ingredients. Most of the vegetables com from our own vegetable garden. Local producers provide us organic food.

The wine is also a very important part of this program. Every class starts with the magic of a glass of white wine. Local wineries are also important moments of the tours.

The Refúgio da Vila Hotel was a manor house when it was built in 1834.
Nowadays, that house was converted into a comfortable and elegant place
to receive you.

In a general way, we cook in the morning and we tour in the afternoon.
